As winter beckons, these fire-touched recipes capture the essence of seasonal cooking at its most convivial. These dishes are made for gathering, sharing, and celebrating. Each recipe comes paired with a carefully chosen wine, making every meal an occasion worth savouring.

Prepare the fire by building it up and letting it burn down to a bed of large, glowing embers. Use a shovel to form a circle of embers and place the pumpkin in the center. And don't worry if you're cooking in your home kitchen, you can roast the pumpkin in an oven. While the pumpkin is cooking prepare the partridge. To serve, drizzle the pumpkin mixture with rapeseed oil and serve alongside the partridge with a dollop of harissa aioli.
